Hey Elizabeth!

I made a chuck roast last night and it was AMAZING. I was going to share the recipe but can't find the facebook page that you mentioned. The link to the recipe is here:

I used turnips and baby carrots instead of parsnips because they aren't my favorite, and it was to die for, the spices didn't overpower the veggies and it had a Great Beef taste (hehe) unlike any I've had. I made a gravy with some of the sauce and it was wonderful. We licked our plates!

Sr Padilla was a pleasure to work with. We had two steer split 6 ways and he accommodated that no extra charge. He had everything packed in boxes and loaded it into my wagon. He also saved organs and random bones and remnants for our dog at no extra charge. He hung the beefs a little longer at our request for aging and due to scheduling concerns. I highly recommend him, he was super friendly. My only issue is that he has been a butcher for a LONG time and some of the newer cuts (tri-tip) he was unfamiliar with and wasn't keen on double wrapping. He delivered exactly what we requested. I haven't weighed everything but I am guessing we averaged about $6 a pound, a wonderful price for a fabulous opportunity. We had an extra share of beef and our nextdoor neighbors jumped on the opportunity, and they said their roast was amazing too.

Ok folks, we picked up our delicious meat today! I decided to do some rough estimates on how much we paid per pound of meat, take home, per pound, then per pound including processing. This is a bit rough because I basically weighed myself on the bathroom scale, then while holding all of my boxes of meat (not all at the same time though, haha!), to get an idea of how many pounds of meat I have. SO, I took home 131.5 lbs of meat in my half of our cow.

My cow's hanging weight was 325 #s. Assuming the other half of the cow was about the same that means 263 #s of meat was taken home, leaving only 62 lbs of 'waste', hide, bones, etc. BUT, I also was given a huge box of bones that weighed about 40 lbs, so that is pretty good! If anyone wants doggie bones let me know!

Nitty Gritty:

For my half we paid $2.60 per pound of meat before processing, [the total packaged price being] $3.89 per pound including processing! That is awesome! Consider how much we pay for free range, hormone- and antibiotic-free, grass fed only beef at the co-op, or elsewhere, anywhere from $6-$10 per pound depending.

WE ARE VERY PLEASED!!!

Mike [the butcher] did a fantastic job processing, our halves were divided pretty much identically with a few less cuts here or a few more, but nothing drastic.

Looks like he [the butcher] charged around 6 percent. The processing fee for the whole cow was 340 bucks. In total for the cow, including processing, it [was] over a thousand bucks. No worries though. Promise us you won't raise the prices too much, especially if you add tax, but we understand that you need to, it's the way the world turns. :)

Steer 41/MY hanging weight was 320 pounds

... I have still have "Schnitzel" as he is called. He is a pretty big boy now. I plan to butcher him in the fall. He is about 900-950 live weight right now. He enjoys his body scratched/rubbed with the leaf rake! He gets to run around the yard when I lock the front gate. During that time, he visits with the horses and plays with the dog.

SO to answer your question, yes, totally satisfied.... I have told other people about your beef and hope they contact you. I 'll send you pictures. My friend Jim butchered his about 6 weeks after we picked them up. He too is very satisfied. I don't know how much meat he ended up with, but he is pleased at the lean-ness and taste.

I just wanted to say that we are incredibly pleased with the steer we purchased at the round up. We... prepared some this evening and it was hands down the best beef I've ever eaten. Hi, we are interested in a cow this year. We were at the round-up with the Mara's last year (we had our little baby Bella with us) and had a great time and are really enjoying our 1/4 cow, yum!!! We will be splitting this years cow with a friend. Unfortunately we won't be able to attend the spring round-up because I am pregnant and due on the 19th, so that would be cutting it pretty close to travel so far from home.

Thank You Elizabeth. The Heifers are at Angel Fire...

We have named the brown heifer Kho, it is my grandaughter's nickname, and the white face with the eyebrow markings is Mary Kay.

I cannot tell you how happy I am. The heifers are tame and docile, easy to move and work. I give them an all organic cake supplement, it helps replace the nutrients they were getting from the milk, as they transition to grass. Best to Andrew.
